Coconut Tandoori Beef Kabobs

Recipe makes 5 Servings

4 1/2 Oz Lotus Kitchen Coconut Chutney
1/2 cup(s) yellow onion, rough chopped
3 medium garlic cloves
2 Lb New York Strip Steaks, fat trimmed, cut into 1 inch cubes
8 assorted baby peppers, halved and stem, ribs, and seeds removed
1 1/2 Tbsp Adams Reserve Tandoori Seasoning
1 Tsp salt

Instructions

In a food processor or blender add coconut chutney, onions, and garlic. Blend until smooth. Place meat and marinade into resealable plastic bag and refrigerate for 2 hours minimum.

Soak skewers in cold water until ready to use. Heat grill to medium-high, about 375ºF.

While grill heats remove meat from bag and skewers from water. Place half of baby pepper on skewer then 4 to 5 pieces of marinated meat and finish with another half of baby pepper. Repeat until all meat is skewered.

Season skewers with Tandoori seasoning and salt and place on grill. Cook 1 to 2 minutes a side and then move to a cool spot on grill and close grill lid. Cook 6 to 8 minutes until meat reaches desired doneness.
