1 1/2 cup(s) jasmine rice
2 cup(s) chicken stock
1 cup(s) low fat coconut milk
1/2 Tsp sea salt
3 Tbsp cilantro, finely chopped
1 Tbsp green onions, finely chopped
2 Tbsp fresh lime zest, finely grated

Instructions

Heat a large saucepan over medium high.

Add rice, stock, coconut milk and salt. Stir.

Bring to a simmer, cover and reduce heat to low. Cook for 20 minutes, or until liquid has been absorbed.

Remove from heat. Add cilantro, green onions and lime zest.
