Coconut Curry Chicken Tacos

Ingredients

Recipe makes 8 Servings

1 Lb Grade A Chicken Tenders
14 Oz lite coconut milk
2 Tbsp McCormick Curry Powder
1 lime, juiced
1 jalapeno pepper, seeded and chopped
1 granny smith apple, chopped
1 mango, peeled and chopped
2 Tbsp basil, chopped
8 flour tortillas

Instructions

In a zip-close bag, combine chicken, coconut milk and curry powder and set in the refrigerator.

Preheat the grill to medium-high heat.

In a medium size bowl, combine the apple, mango, jalapeno, basil and lime juice. Cover and place in the refrigerator.

Remove the chicken from the bag leaving as much of the marinade on it as possible.

Place chicken on the grill and cook for 4-6 minutes per side.

While chicken is grilling place the tortillas on the grill. Cook tortillas a few minutes per side.

Remove chicken and tortillas from the grill.

Place curried chicken in the tortilla and top with salsa.
