Coastal Coconut Shrimp Skewers

3/4 cup(s) H-E-B Coconut Flour
3 large eggs
1/2 cup(s) H-E-B Organics Unsweetened Coconut Flakes
1 cup(s) Kikkoman Gluten Free Panko Style Coating
3 Tbsp H-E-B Select Ingredients Fish Market Coastal Spice Blend
1 Lb H-E-B Raw Wild Gulf Jumbo Shrimp, thawed, peeled and deveined
1/2 L peanut oil, (or as needed for shallow frying)

Set up a breading station in 3 shallow bowls. Add coconut flour to one bowl. Beat eggs well in a second then mix shredded coconut, bread crumbs and seafood rub in a third.

Dip each shrimp into coconut flour, then egg, then breadcrumb mixture to thoroughly coat.

Thread 3 shrimp on a skewer, poking through each shrimp twice to help keep them in place. Repeat with remaining shrimp. Skewers should be short enough to fit in a pan with frying oil. Chill in refrigerator while oil is heating.

Pour peanut oil into a skillet to about a 1/2 inch depth. Place over medium heat until oil reaches 350°F.

Using tongs, carefully lower a few skewers at a time into oil, do not crowd pan. Cook until shrimp are golden brown (about 1 to 2 minutes per side). Transfer to a paper towel-lined plate to drain excess oil. Add salt and pepper to taste.

Keep warm and repeat with remaining skewers. Serve warm with dipping sauce of your choice.
