22 Oz Gluten Free Yellow Cake Mix
2/3 cup(s) Almond Milk
1/2 cup(s) Coconut Oil
3 Large Eggs
2 Tsp Vanilla Extract
1 cup(s) Bitter-Sweet Chocolate Mini Baking Chips

Preheat oven to 350˚F.

Line a standard muffin tin with baking cups.

Combine cake mix, almond milk, oil, eggs and vanilla in a bowl with an electric mixer according to package directions. Then add in the chocolate chips.

Fill cups 3/4 of the way with batter, then bake for 25 to 30 minutes or until a toothpick inserted in the center comes out clean.

Let cool 5 minutes before eating. Extra muffins can be stored in a resealable container.
