3 cup(s) peanut oil
3 cup(s) all purpose flour, divided use
1/4 Tsp baking soda
4 Tsp baking powder
1/2 Tsp salt
1/4 cup(s) unsalted butter
1/4 cup(s) sugar
5 large eggs, 1 whole, 4 beaten, divided use
2 1/2 cup(s) whole milk, divided use
3 Tsp vanilla extract
1 Lb chicken tenders
1 cup(s) maple syrup

Using a medium-size pan, add peanut oil and heat until temperature reaches 350ºF (use a candy thermometer).

While oil is heating, prepare waffle batter. To a large bowl, add 2 cups of flour, baking soda, baking powder, salt, butter, sugar, 1 egg, 1 1/2 cups whole milk, and vanilla extract. Mix together then set aside for 10 minutes to rest.

Set up a breading station using 3 separate disposable pans. Add beaten eggs to the first, 1 cup of milk to the second, and remaining flour to the third.

While waiting for oil to reach 350ºF, start a classic breading procedure. Place a chicken tender in the milk first, then the flour, followed by the eggs, and finish with more flour.

Repeat this process until all the chicken has been breaded.

To fry the chicken (in batches if necessary), place gently into hot oil and cook until golden brown, or 160ºF internal temperature.

Start and preheat your waffle maker, while chicken is frying.

Once chicken is done, place onto a perforated pan and season with salt.

Spray waffle maker irons with non-stick spray, add 1/2 cup of waffle mixture and cook until golden.

To serve, top waffles with unsalted butter, cooked chicken, and maple syrup.
