Ingredients

Recipe makes 8 Servings

8 Oz Banza Pasta, cooked
1 1/2 Lb lean ground beef
1 cup(s) onions, diced
1 Tsp garlic powder
2 Tbsp tomato paste
14 1/2 fl oz canned diced fire roasted tomatoes, liquid included
3 Tbsp Dijon mustard
2 cup(s) 2% reduced fat shredded cheddar cheese
1 cup(s) tomatoes, diced
1/4 cup(s) dill pickles, diced
2 cup(s) romaine lettuce, shredded

Instructions

Preheat oven to 350ºF. Lightly spray a 9 x 13-inch baking dish with nonstick spray and set aside.

Set a large pot of water to boil and cook pasta according to package directions.

Meanwhile, heat a large skillet on medium-high then brown ground beef, breaking it up as it cooks.

Once beef is well browned, add in onions and garlic powder and continue to cook.

Stir in tomato paste, canned diced tomatoes and Dijon mustard. Continue to cook to allow sauce to thicken.

Combine tomato and beef mixture with cooked pasta.

Spread half of mixture into prepared pan followed by half of cheese. Repeat with remaining pasta mixture and cheese.

Bake 15 to 20 minutes. Remove from oven and serve topped with diced tomatoes, dill pickles and shredded lettuce.
