Charred Lemon Asparagus

Ingredients

Recipe makes 4 Servings

1 Lb asparagus
3 Tbsp lemon olive oil
1 1/2 Tsp garlic, finely minced
2 Oz bacon, fully cooked and finely chopped
2 Tbsp freshly grated Parmesan cheese
1/4 Tsp black pepper, freshly ground

Instructions

Heat broiler to high (or a grill may be used over medium-high heat).

Wash and trim any woody ends from asparagus.

In a small bowl stir together lemon oil and garlic.

Drizzle half of lemon oil mixture over asparagus and broil 4-6 minutes, depending on thickness of asparagus. Stalks should be bright green with char marks, but not soft.

Remove from heat and toss with remaining oil, bacon, Parmesan cheese and pepper.

Optional: Garnish with freshly grated lemon zest, if desired.

Serve warm as a side dish or chilled as a salad.
