Caldillo Tacos with Spiced Avocado Crema

Ingredients

Recipe makes 4 Servings

1 Tbsp grapeseed oil
1 Lb beef caldillo
1 Tsp ground cumin
1 Tsp Morton & Bassett Smoked Paprika
1 Tsp kosher salt
3 jalapeño pepper, roasted, seeded and chopped
1 Large Hass avocado, ripe
1 cup(s) sour cream
1 green onions, chopped
3 lime, juiced
3 Tbsp water

Instructions

In sauté pan add grapeseed oil, and allow to get hot. Add in caldillo and season with cumin, paprika, and salt. Stir-fry 5 - 6 minutes until meat is fully cooked and slightly browned.

Cut avocado in half, remove seed, scoop out flesh and place in blender or food processor.

Add jalapeños, sour cream, green onions, lime juice and water. Pulse until smooth and season to taste with salt and pepper. Add more water if necessary to make it smooth.

Serve cooked beef on tortillas and top with avocado crema.
