1/2 Tbsp extra virgin olive oil
12 Oz andouille sausage, ends trimmed, sliced into 1/4 inch rounds
1/2 cup(s) creole seasoning
16 Oz cajun style baby potatoes
14 1/2 Oz diced tomatoes
2 Tbsp fresh green onion(s), green tops only, thinly sliced

Instructions

Add oil to a large skillet set over medium-high heat. When hot, add sausage and cook for 2 minutes, stirring occasionally.

Add creole seasoning mix and baby potatoes. Stir and let cook for 2 minutes.

Add diced tomatoes, cover pan, and reduce heat to medium. Cook for 15 minutes, stirring once.

Sprinkle with green onions and serve.
