2 Tsp H-E-B Baking Powder
2 Tsp Hill Country Fare Baking Soda
1/2 cup(s) Hill Country Fare Corn Starch
2 1/4 cup(s) H-E-B Low Fat Cultured Buttermilk
2 large H-E-B Cage Free Large Brown Eggs, yolks and whites separated
1/4 cup(s) H-E-B Expeller Pressed Sunflower Oil, or any neutral vegetable oil
4 Oz Plugra Unsalted European-Style Butter, melted
1/4 cup(s) H-E-B Organics Medium Amber Maple Syrup

Preheat waffle iron to highest heat setting.

While waffle iron is heating, place flour in a large bowl along with salt, baking powder, baking soda, and corn starch. Whisk to combine.

In a blender combine buttermilk, egg yolks, oil, melted butter, maple syrup, and vanilla extract. Blend until smooth and creamy; set aside. In a separate bowl, whip egg whites to stiff peaks.

Add blended wet ingredients to dry mix and whisk until batter is relatively smooth with little to no lumps. Lastly, gently fold egg whites into batter until well combined.

To cook waffles, spray top and bottom of hot waffle iron with non-stick spray then add a ladle of waffle batter.

Evenly distribute batter before closing lid. Cook for 6 to 8 minutes or until waffle is golden brown. Repeat for additional waffles.

Serve with butter and maple syrup as needed.

Chef's Note: To ensure waffles are crispy, preheat oven to 300ºF. Place hot waffles directly on the oven rack for 3 to 5 minutes to keep warm before serving.
