Butter Roasted Portobello Mushrooms

1 Lb organic whole baby portobello mushrooms, cut into quarters
1/2 cup(s) organic bunch leeks
1 Tbsp fresh organic thyme, chopped
1 Tsp kosher salt
1 Tsp black pepper
2 Oz unsalted butter, diced

Instructions

Preheat oven to 350ºF. Place mushrooms in an oven safe dish and set aside.

Cut green tops off leeks and discard (or keep for stock making). Slice white stalk in half and then cut each half into thin slices until you have 1/2 cup of half moon slices. Sprinkle over mushrooms in baking dish.

Toss thyme, salt, pepper and diced butter with mushrooms and leeks until coated with seasonings. Cover with foil and bake 30-35 minutes or until mushrooms are tender and fully cooked. Season with more salt and pepper to taste.
