Brisket Sausage Melon Kabobs

Ingredients

Recipe makes 3 Servings

1/2 medium honeydew melon, skin and seeds removed, cut into 1 inch cubes
12 Oz H-E-B Texas Heritage Beef Brisket Sausage, cut into 1 inch pieces
6 Chefstyle Bamboo Skewers, soaked in water 1 hour
2 medium jalapeño pepper(s), cut into 1/2 inch pieces, stem removed
1/4 Tsp H-E-B Fine Crystals Mediterranean Sea Salt
1/2 Tsp H-E-B Pure Ground Black Pepper

Instructions

Preheat grill to medium-high. Meanwhile, starting with melon, alternate pieces of melon and sausage on each skewer until there are 3 pieces of each on every skewer.

Add a piece of jalapeño on the end of skewers if desired. Spray lightly with non-stick spray and season with salt and pepper.

When grill is at temperature, lay skewers on grill and cook 3 to 4 minutes per side until sausage is browned and heated through and melon pieces are slightly softened.

Remove from grill and serve immediately. Serve over rice for an entrée.
