Brie and Bacon Queso Flameado

Ingredients

Recipe makes 6 Servings

1/3 cup(s) dried cranberries
1/3 cup(s) hot water
3 slices of bacon, chopped
2 small sprigs fresh rosemary, leaves removed from stems
8 Oz double crème Brie
1 Oz good quality bourbon, (optional)

Instructions

Preheat oven to broil.

Add cranberries and water to a small dish, microwave for 30 seconds or just long enough to rehydrate cranberries. Set aside.

Place bacon and rosemary in an ovenproof skillet. Stir and cook until bacon is mostly cooked through, about 4 to 6 minutes. Drain excess oil from pan but leave bacon in skillet.

Place disc of Brie on top of bacon. Drain cranberries then place on top of cheese. Broil 5 to 6 minutes, or until top begins to blister and brown.

Remove from oven. Just before serving, pour bourbon over cheese and allow it to bubble up. Using a lighter, set the bourbon on fire.

Garnish with additional chopped fresh rosemary if desired and serve with toasted naan bread, French bread or pita chips.
