8 H-E-B Mixla Tortillas
1 Tbsp olive oil
1 H-E-B Spinach & Mushrooms Breakfast Starters
8 Oz extra thin sliced chicken

Instructions

Heat a large dry skillet over medium-high.

Toast tortillas until slightly browned on both sides, but still soft. Set aside and keep warm.

Return hot skillet to stove. Add oil and mushrooms, bell peppers and onions (from breakfast kit) to skillet. Sauté 3 to 4 minutes to brown mushrooms and soften onions.

Add chicken and spinach to pan. Stir-fry 1 minute, then add tomatoes.
