Braised Chicken Thighs

Ingredients

Recipe makes 4 Servings

1 Tbsp olive oil
4 bone in chicken thighs
1/2 medium onions, sliced
1 jalapeño, seeded and chopped
1 red bell pepper, chopped
15 Oz H-E-B Tomatillo Pasta Sauce, plus 1/2 cup water added to jar and shaken to remove all sauce

Instructions

Preheat oven to 325ºF. Heat oil in a large oven safe skillet over medium-high heat.

Season chicken generously with salt and pepper then place skin-side down in skillet. Sear several minutes until skin is well browned. Turn and cook for a few more minutes.

Remove chicken from pan then add onions, peppers, and garlic. Cook just until the onions become translucent, then add in tomatillo sauce.

Bring to a simmer then nestle the chicken back into the pan, leaving the top 1/4 above sauce. Cover with foil and bake 45 minutes.

Serve over polenta, mashed potatoes, or rice.
