Ingredients

Recipe makes 6 Servings

1 Tbsp fresh garlic, minced
12 Oz pico de gallo
1 cup(s) Mexican beer or any beer
31 Oz black beans, drained and rinsed
1 Qt vegetable stock
2 cup(s) angel hair shredded cabbage
1 Tsp ground cumin
1 bunch cilantro, chopped, plus more as needed

Instructions

Set a Dutch oven or any large pot over medium heat.

Add garlic and pico de gallo. Cook until just soft.

Add beer and allow to cook 3 to 5 minutes to burn off alcohol.

Add beans, stock and cabbage. Bring to a simmer, cook 10 to 15 minutes before adding in cumin and cilantro.

Let cook 5 to 10 more minutes and season to taste as needed with salt and pepper.
