Blackberry Brie Dip

2 cup(s) fresh blackberries
1 cup(s) sugar
1 Tbsp lemon, juiced
14 Oz brie cheese
1 bag of H‑E‑B Sea Salt Baked Pita Chips

Preheat oven to 350°F. In a small sauce pot add blackberries, sugar and lemon juice. Cook over medium low heat 20-25 minutes (making sure mixture never reaches more than a simmer). Cook until blackberries are completely broken down into a sauce.

Remove blackberries from heat and allow to cool before transferring to a blender.

Using an oven safe pyrex dish lined with aluminum foil (for easy clean-up), cut brie cheese into chunks. (Remove brie rinds if you prefer a smoother dip.) Arrange cheese chunks together on foil lined pan and allow to reach room temperature.

Once blackberry sauce has cooled enough transfer to a blender and puree. Pour pureed mixture through a fine mesh strainer (to remove all the seeds) and transfer back to the same pot. Cook strained blackberries on low heat to reduce just slightly. Blackberry sauce should be reduced enough to coat the back of a spoon without running off.

Place brie cheese in oven and allow to bake for 10-15 minutes or until cheese is just melted together. Remove from oven and pour blackberry sauce over it. Eat warm with pita chips.
