1/2 cup(s) shredded cheddar cheese
2 1/4 cup(s) BakeHaven Keto Flour, divided use
1 Tsp kosher salt, divided use
1/2 Tsp baking soda
1/2 Tbsp baking powder
4 Oz unsalted butter, very cold and cut or shredded into small pieces
1 Tbsp apple cider vinegar
1/2 cup(s) water, divided use
2 1/2 cup(s) half & half, divided use
2 Tbsp grapeseed oil
6 Beyond Meat Breakfast Sausage Patties
1 Tbsp ground black pepper
1/4 Tsp hot sauce

Instructions

In a large bowl, sift and stir together 2 cups of flour, 1/2 tsp salt, baking soda, and baking powder.

Add butter pieces to dry ingredients and use a pastry cutter or your hands to work butter into the flour mixture until it resembles wet sand.

Combine vinegar, 1/4 cup of water, and 2 Cups of half & half. Pour into dry ingredients and stir to form a ball. Knead for 1 minute (it will be sticky) then wrap or cover in plastic wrap. Refrigerate for 20 minutes.

While dough chills, preheat oven to 375ºF. Spray a baking sheet with non-stick spray and set aside briefly

Remove dough from refrigerator and place on a lightly flour-dusted surface. Use a rolling pin to roll out dough to about 3/4 inch thick. Cut out 12 equal-sized biscuits with a biscuit cutter or a sharp knife.

Place on prepared baking sheet and brush tops with a small amount of half and half. Bake for 12 minutes until browned on top.

Meanwhile, Place a medium saucepan over medium-high heat. Add oil and sausage patties. Using a spoon or spatula, break sausage into small pieces and cook until it starts to brown.

Add remaining flour and stir well to combine. Cook for 30 seconds, stirring constantly. Add remaining water and turn heat down to medium, stirring and scraping browned bits from bottom and sides of pan.

Stir in remaining salt, half and half, and pepper. Heat, stirring frequently, until gravy begins to bubble near the edges.

Continue to cook until thickened to desired consistency. Add hot sauce, remove from direct heat, and keep warm until served

Place 3 biscuits on a plate and top with half a cup of gravy. Sprinkle with cheddar cheese and serve.
