Beer Cheese with Pigs in Blankets

Recipe makes 12 Servings

14 Oz H-E-B Premium Smoked Sausage, cut into 1.5 inch pieces
17 Oz puff pastry, thawed and cut into 1/2 inch strips
1 large egg, beaten
2 Tbsp H-E-B Bagel Not Included Spice Blend
12 Oz Sam Adams Octoberfest Beer, or other brown beer
1 clove garlic, crushed
1 Tbsp Worcestershire sauce
1/2 Tbsp sherry vinegar
1 Tbsp spicy brown mustard
12 Oz evaporated milk
3 cup(s) extra sharp cheddar, shredded
3 Tbsp cornstarch

Preheat oven to 400ºF and line a sheet pan with parchment.

Wrap each piece of sausage with a strip of puff pastry. Press the end of the pastry firmly to seal and place seam side down on sheet pan. Brush with beaten egg and season with bagel seasoning.

Bake 12 to 15 minutes or until pastry is crisp and golden brown. Remove and set aside.

To make beer cheese, combine beer, garlic, Worcestershire sauce, sherry vinegar, and mustard in a medium saucepan. Bring to a boil then reduce to a simmer and continue to cook until reduced by half.

Pour in evaporated milk and bring back to a low simmer.

In a separate bowl, toss shredded cheese with cornstarch and whisk into simmering beer mixture until smooth and combined. Season generously with salt and black pepper.

Serve in a bowl alongside warm pigs in a blanket.
