12 Oz Hefeweizen beer
1 Garlic cloves, crushed
1 Tbsp Worcestershire sauce
1/4 cup(s) Sherry wine
1 Tbsp Whole grain mustard, or spicy brown mustard
10 Oz Evaporated milk
2 cup(s) Extra sharp cheddar cheese shredded, shredded
2 cup(s) Restaurant style 50/50 blend cheese
2 Tbsp Enriched cake flour

Combine beer, garlic, Worcestershire sauce, sherry, and mustard in a medium saucepan. Bring to a boil then reduce to a simmer and continue to cook until reduced by half.

Pour in evaporated milk and bring back to a low simmer.

In a separate bowl, toss shredded cheeses with flour and whisk into simmering beer mixture until smooth and combined. Season generously with salt and black pepper.
