Recipe makes 4 Servings

3/4 L beef skirt for fajitas
1 1/2 Tsp Mi Tienda Fajita Seasoning
1 Tbsp vegetable oil
1 cup(s) onion, sliced
1 cup(s) red bell pepper, sliced
8 4/5 Oz pkg. Central Market White and Red Quinoa, cooked according to pkg. directions
2 cup(s) power greens, chopped
1 avocado, diced
1 cup(s) salsa, your favorite brand
2 Tbsp pepitas

Instructions

Season fajita meat with seasoning and drizzle with oil. Set aside.

Heat a large skillet over medium-high heat. Once pan is hot, sear meat for several minutes on each side until well browned but still pink on the inside. Remove from pan and set aside.

In the same pan add onions and bell peppers and cook until tender. Remove from heat.

Slice beef against the grain then toss with pepper and onion mixture.

To build bowls, layer in cooked grains with greens, beef and vegetable mixture, avocado, salsa and top with pepitas. Serve immediately or put in resealable container for lunches.
