Beef & Broccoli Zoodles

Ingredients

Recipe makes 2 Servings

1 Tbsp hoisin sauce
1/4 cup(s) orange juice
1 Tbsp reduced sodium soy sauce
8 Oz sirloin steak, about 1 inch thick
2 large heads of broccoli with stem
1 Tsp black pepper
1 Tbsp garlic, minced
1 Tbsp ginger, grated
1/2 cup(s) green onions, chopped
1 Tbsp roasted peanuts, crushed for garnish (optional)

Instructions

Combine hoisin, orange juice, soy sauce and sirloin in a container. Shake until sirloin is coated and set aside.

Place a large pot of water over medium heat and bring to a boil. Prepare ice bath.

Meanwhile, remove tops of broccoli from stems and cut into florets. Using a vegetable spiralizer, make zoodles from stems.

Place zoodles and florets into the boiling water for 2 minutes then remove and place in an ice bath to cool.

Lightly spray nonstick cooking spray onto a nonstick skillet over medium-high heat.

Remove beef from marinade and season with black pepper. Reserve marinade.

Add steak and cook for 4 minutes per side then transfer to a cutting board and allow beef to rest for several minutes before slicing.

In the same skillet add garlic, ginger and green onions. Cook briefly until fragrant then add reserved marinade and bring to a simmer.

Add blanched vegetables and toss in simmering marinade. Cook for 3 to 4 minutes to heat zoodles through then remove from heat.

Divide zoodles evenly between 2 bowls, then top with sliced steak and crushed peanuts.
