Ingredients

Recipe makes 6 Servings

3 Tbsp olive oil, divided use
1 medium sweet potato, peeled and cubed
1/2 Tsp garlic powder
1/2 Tsp salt
8 Oz Lightlife Soy Organic Tempeh, cut into 1/2-inch long strips
1 Tbsp Bragg Liquid Aminos
1 Tbsp maple syrup
2 Tbsp BBQ sauce
1/2 cup(s) 2% fat shredded cheddar cheese
1 large avocado, diced
8 corn tortillas

Instructions

Heat 2 tablespoons of oil in a large skillet on medium-high.

Season sweet potato with garlic powder and salt, and cook until tender and well browned.

Place tempeh on a cutting board or plate and drizzle with Bragg Liquid Aminos, maple syrup and remaining olive oil. Set aside.

Preheat a grill or grill pan to medium. Grill tempeh strips several minutes per side or until edges begin to crisp.

Brush with BBQ sauce and cook a few minutes longer then remove from heat.

To make tacos, evenly divide tempeh, sweet potatoes, cheese and avocado among tortillas. Serve immediately.
