Ingredients

Recipe makes 6 Servings

1 non-stick cooking spray
16 Oz H-E-B Fajita Vegetables
2 Tbsp canola oil
16 Oz peeled Gulf Shrimp, thawed
1/2 Tbsp crushed red pepper
1/8 Tsp kosher salt
1/8 Tsp pepper
16 Oz H-E-B Spanish Rice

Instructions

Spray 13 x 9-inch baking dish with non-stick cooking spray and set aside.

Place bag of fajita vegetables in microwave, heat on high power for 2 minutes and drain.

Heat heavy bottom skillet for 3 minutes on high.

Add oil and fajita vegetables and stir-fry for 4 minutes or until golden brown.

Add shrimp and stir fry for 2 minutes. Sprinkle with crushed red pepper on shrimp mixture. Season with salt and pepper.

Heat Spanish rice according to package directions. Evenly spread the shrimp mixture over the rice.

Cover dish with plastic wrap and microwave on high power for 1 minute and serve.
