Asian Inspired Beef Tacos with Fresno Chili Slaw

1 Lb beef caldillo
1 Tbsp soy sauce
1 Tbsp garlic clove, minced
1 Tsp ginger, minced
1/4 cup(s) green onions, finely chopped
10 Oz broccoli slaw
1/2 cup(s) red onions, julienned
1/2 cup(s) Fresno chili pepper
1/4 cup(s) cilantro, chopped
3 lime
1 Tsp sugar
1 Tsp kosher salt
1 Tsp toasted sesame oil

In a bowl combine beef, soy sauce, garlic, ginger and green onions together, toss to coat. Marinate for at least 1 hour; overnight is even better.

While beef is marinating, make slaw by combining the broccoli slaw, red onion, Fresno chili and cilantro.

In a separate bowl whisk lime juice, sugar and salt together until sugar and salt dissolve.

Pour dressing over slaw mix and toss to coat. Allow to sit for at least 30 minutes to let flavors meld. (The longer slaw marinates the better it tastes.)

To cook, add oil to a pan and allow to get hot. Add marinated caldillo to pan and stir fry until the meat is fully cooked and slightly browned.

Serve meat on your favorite tortillas and top each with slaw.
