Ingredients

Recipe makes 8 Servings

3 Tbsp vegetable oil
1 cup(s) white onion, sliced
1 Tbsp peeled garlic cloves, minced
1 Tbsp Mexican oregano
1 Lb seasoned beef skirt steak for fajitas, diced or cut up into smaller pieces
2 cup(s) basmati rice
3 cup(s) unsalted beef broth
1/2 cup(s) fresh cilantro, roughly chopped

Instructions

In a large Dutch oven set over medium-high heat, add oil, and allow to get hot.

Add onions, garlic and oregano and stir-fry until translucent.

Add beef fajitas and stir-fry an additional 3 to 4 minutes.

Add rice and continue to stir-fry an additional 4 to 5 minutes or until rice just starts to lightly toast.

Pour in beef broth, bring to a rapid boil then reduce heat to low and cover.

Cook 20 to 30 minutes or until all the liquid is absorbed and rice is cooked through.

Season to taste as needed and garnish with fresh cilantro before serving.
