4 cup(s) Honeycrisp apples or your favorite apple, peeled, cored and diced
2 Tsp Hill Country Fare Ground Cinnamon
1 1/2 cup(s) H-E-B Organics Pure Cane Sugar, plus an additional 1 tbsp for apples
8 Oz Plugra European-Style Unsalted Butter, softened at room temperature
1/2 cup(s) full fat sour cream, allowed to come to room temp
2 Tsp H-E-B Baking Powder
1 Tsp H-E-B Fine Crystals Mediterranean Sea Salt
2 cup(s) H-E-B Organics Unbleached All Purpose Flour
1/2 cup(s) Hill Country Fare Corn Starch
4 large H-E-B Cage Free Large Brown Eggs
1 1/4 cup(s) H-E-B Full Fat Buttermilk
1 Tbsp H-E-B Pure Madagascar Bourbon Vanilla Extract
2 Tbsp McCormick Cinnamon Sugar, or as needed for garnishing top of apples

Preheat oven to 350ºF. Grease 2 standard loaf pans evenly with non-stick spray and set aside.

In a bowl, add diced apples, 2 teaspoons of cinnamon, and 1 tablespoon of sugar. Toss well to coat and set aside.

In the bowl of a stand mixer, add butter, remaining sugar, sour cream, baking powder, and salt. Using the paddle attachment on medium speed, beat until creamy.

Turn mixer off. Add flour, corn starch, eggs, buttermilk, and vanilla extract to bowl. Turn mixer on medium speed and mix until batter is smooth, scraping down sides as needed.

Add 1/2 of apple mixture to the batter and turn mixer to low speed. Mix until apples are evenly distributed in the batter.

Divide batter between prepared pans. Arrange remaining apples over batter in both pans then sprinkle a liberal amount of cinnamon sugar over the top.

Bake approximately 50 to 65 minutes, rotating pans halfway through to ensure even cooking. Cakes are done when a toothpick inserted in the center of each cake pulls out clean.

Remove from oven and allow to cool for at least 1 hour before cutting and serving.
