40 Oz H-E-B Super Sweet Corn
8 Oz H-E-B Neufchâtel Cream Cheese
3/4 cup(s) heavy cream
1/2 cup(s) chicken stock
1/2 cup(s) Red Rio Adobo Sauce
12 Oz pico de gallo
1 Tsp kosher salt
1 Tsp black pepper, freshly ground
1/2 cup(s) cilantro, finely chopped, divided use

Heat oven to 350°F. Place corn, cream cheese, cream, chicken stock, sauce, pico de gallo, salt, pepper and half of cilantro in a 9” x 13” pan. Stir gently with a fork to combine. Cream cheese and corn will be lumpy. Cover with foil.

Bake 1 hour, stirring half way through. Garnish with remaining cilantro. Serve warm.

Can also be done in a crock pot (cook on medium setting 3 hours) or microwave (cook on high about 20 minutes stirring several times throughout cooking time).
