Recipe makes 8 Servings

1 1/2 Lb thinly sliced chicken breasts
1 Tbsp Mi Tienda Achiote Seasoning
6 cup(s) H-E-B Organics Chicken Stock
1 cup(s) green onions, chopped
2 bay leaves
1 1/2 cup(s) carrots, peeled and roughly chopped
2 medium jalapeños, seeded and thinly sliced
1 cup(s) celery, chopped
1/2 cup(s) cilantro, chopped
1/4 cup(s) lime, juice

Instructions

Season chicken breasts with achiote seasoning on both sides and refrigerate 30 minutes to 1 hour.

In a large soup pot, add seasoned chicken, chicken stock, green onions, bay leaves, carrots, jalapeños and celery.

Bring everything to a simmer and cook 45 minutes to 1 hour. Skim off any foam that floats to the top while cooking.

Once chicken is fully cooked, remove and shred with a knife and fork.

Lower heat and add shredded chicken back to the pot. Stir in cilantro and lime juice. Continue to cook an additional 10 to 15 minutes.

Serve with shredded cabbage and rice if desired.

Season to taste with more achiote seasoning.
