Ingredients

Recipe makes 2 Servings

2 Tbsp extra virgin olive oil
2 cup(s) white onions, thinly sliced
1/2 Tsp chili powder
1/2 Tsp ground cumin
3/4 cup(s) Alamo Pilsner, or your favorite beer
8 slices naturally leavened sourdough square bread
4 H-E-B Monterey Jack with Jalapeño Peppers Natural Cheese Slices
4 H-E-B Provolone Natural Cheese Slices
4 H-E-B Colby & Monterey Jack Natural Cheese Slices

Instructions

Place a non-stick sauté pan over medium heat. Add oil and onions and stir-fry 2 minutes.

Add chili powder and cumin, and stir-fry another 4 to 6 minutes.

Stir in beer and continue to cook until beer is totally evaporated and onions are nicely soft and caramelized, approximately 14 to 17 minutes.

Set onions aside to cool slightly.

To assemble sandwiches, place one slice of each type of cheese on 4 slices of bread, evenly spread onions over cheese, add top slices of bread and press together.

Cook sandwiches on a preheated panini press until cheese is melted and bread is nicely crispy. Serve with your favorite condiments.
