Cacio de Roma is an Italian semi-soft, sheep's milk cheese made in the countryside of Rome, Italy. Loved in many regions of Italy, this cheese is primarily enjoyed in the Lazio region on its own, atop a salad, or as part of a classic Roman pasta dish. The cheese is aged for about one month in deep wooden cellars. During this time it develops a sweet and mild flavor. It is a classic table cheese, with a forward aroma of sheep's milk. Since it melts very well, it is used in everyday cooking.
