  • COOKING INSTRUCTIONS 1. Rinse fish well with ice cold water. Shake off excess water. 2. Place Hill Country Fare Spicy Fish Fry Mix in a small bowl or plastic bag. Roll or shake fish in mix until the fillets are well coated. 3. Heat frying oil to 350°F in a deep fryer and carefully lower a few fish fillets into hot oil. Fry until internal temperature is 145°F (about 5 minutes) and coating is golden brown. Package coats approximately 3-4 lbs. of seafood.
