Time: 10 minutes, Cook Time: 10 minutes ¼ cup CREAMY PEANUT BUTTER About 5 1/8 cups HILL COUNTRY FARE REGULAR SIZE MARSHMALLOWS 6 cups REGULAR or COCOA CRISPY RICE CEREAL 1 cup chopped PEANUTS (optional) STOVE-TOP: Melt peanut butter in a 3-quart saucepan over low heat. Add marshmallows, stirring until melted and smooth. Remove peanut butter marshmallow mixture from heat and pour over cereal and peanuts; stir until well coated. Spray hands with non-stick cooking spray and press mixture into prepared baking dish. Let cool and cut into squares. MICROWAVE: 1. Spray a 9x13-inch-baking dish with non-stick cooking spray; set aside. Place crispy rice cereal and chopped peanuts into an extra large mixing bowl and toss to combine. 2. Place peanut butter in a large microwave-safe bowl. Microwave on HIGH power for 30 seconds or until melted. Add marshmallows and toss to coat. Microwave 1 ½ more minutes or until marshmallows are melted. Stir melted marshmallows. 3. Pour peanut butter marshmallow mixture over cereal peanut mixture and stir until well coated. Spray hands with non-stick cooking spray and press mixture into prepared baking dish. Let cool and cut into squares. Makes: 24 Squares EASY FUDGE Prep. Time: 15 minutes 2 cups SUGAR ½ cup BUTTER 1 teaspoon SALT 2/3 cup EVAPORATED MILK 1 ½ cups SEMI-SWEET CHOCOLATE CHIPS 2 ½ cups HILL COUNTRY FARE REGULAR SIZE MARSHMALLOWS STOVE-TOP: 1. Mix sugar, butter, salt, and evaporated milk in a large heavy saucepan over medium heat, stirring to dissolve the sugar. Bring mixture to a boil for 4 to 5 minutes, stirring or whisking constantly. 2. Remove from heat and stir in chocolate chips and marshmallows. Mix until melted and thoroughly combined. 3. Immediately transfer fudge to an 8x8 baking dish and let cool for at least 1 hour. Cut into squares once set.
