Preheat oven to 325°F. Press seasoning onto the surface of roast. Place roast on a rack in a roasting pan (do not add water). Cook uncovered in the center of oven for 25 - 30 minutes per pound, or until internal temperature reaches 135°F. Let roast stand for 15 minutes before carving. Slice thinly across the grain and enjoy.
