  • Picnic Potato Salad
    Serves 12

    48 oz baby red potatoes, halved
    1 cup real mayonnaise
    1 cup cooked bacon pieces
    7 oz celery, chopped
    7 oz bell pepper & onion blend, chopped
    1/2 cup green onions, green tops only, thinly sliced
    1 Tbsp salt
    1 tsp black pepper
    1/4 cup spicy brown mustard
    1 tsp hot sauce

    Place cut potatoes in a large pot with a pinch of salt and cover with cold water. Bring to a boil and cook until tender, about 15 – 18 minutes. Drain, cool, and reserve. In a large bowl, combine all remaining ingredients and stir until well mixed. Add potatoes and stir gently until potatoes are coated. Cover and refrigerate until ready to serve. Stir gently prior to serving.
