Keep in a cool, dry place. Lot number and best by: on package.- Eggplant Parmesan Prep Time: 10 Minutes Bake Time: 15 Minutes 2 lbs. Eggplant 2 eggs 1/2 cup Water 4 Tablespoons extra virgin olive oil 1 cup H-E-B Italian Panko Bread Crumbs 2 cups tomato sauce 1 lb. mozzarella, thinly sliced 1/2 cup Parmesan cheese 1. Preheat the oven to 350°F. 2. Slice the eggplant horizontally about 1/4-inch thick. Place the slices in a large colander, sprinkle with salt and set aside to rest about 30 minutes. Drain and rinse the eggplant and dry on towels. 3. In a sauté pan, heat the extra virgin olive oil. Dip eggplant in mixture of egg and water then press into the H-E-B Italian Panko Bread Crumbs and sauté until light golden brown on both sides. Repeat with all of the pieces. 4. On a cookie sheet lay out the 4 largest pieces of eggplant. Place 2 tablespoons of tomato sauce over each piece and place a thin slice of mozzarella on top of each. Sprinkle with Parmesan and top each with the next smallest piece of eggplant, then sauce, then mozzarella. 5. Repeat the layering process until all the ingredients have been used, finishing again with the Parmesan. Place the pan in the oven and bake until the top of each is golden brown and bubbly, about 15 minutes. Italian Meatballs Prep time: 5 minutes Bake Time: 30 minutes 1 ½ lbs ground beef 1/4 cup onion, finely chopped 2 Tablespoons H-E-B Parmesan cheese 2 teaspoon parsley, finely chopped 1 egg 1 cup H-E-B Italian Panko Bread Crumbs Salt and pepper to taste 1. Preheat the oven to 350 degrees F. 2. Combine all ingredients and mix together well, adding more H-E-B Italian Panko Bread Crumbs as needed. 3. Form small balls, about 1 1/2″ in diameter. Place in ovenproof baking dish, sides touching, and bake for approximately 30 minutes or until done. 4. Add to your favorite pasta dish.
