Beef.- Heat wok or a large, heavy skillet over High heat for 3 minutes. Add 1 Tbsp oil to wok and tip the pan to coat. Season meat to taste, then cook 3/4 to 1 pound at a time for 3 - 9 minutes, scooping and turning continuously until internal temperature reaches 160°F until all juices are absorbed. DO NOT OVERCOOK. Remove meat from pan to serve.
