Keep refrigerated. Ready to cook.- Grill: Heat charcoal for 30 minutes until ash-covered or gas grill for 10 minutes with the lid closed. Clean and oil grate well. Grill chicken thighs about 4 inches over medium heat (375°F is ideal). Cook for 20 – 30 minutes, depending on size, or until an internal temperature of 165°F is reached. Flip chicken thighs every 10 minutes during cooking time. Slice thinly across the grain to serve.
Stovetop: Cut chicken thighs across the grain into ½ inch slices. Heat wok or large heavy skillet over high heat for 3 minutes. Add 1 Tbsp oil and tip the pan to coat. Cook 1 pound at a time to prevent crowding. Stir fry for 7 - 8 minutes, stirring frequently, until no longer pink and until an internal temperature of 165°F is reached.
