Don Juan Manchego Cheeses


Manchegos are Spain’s most famous cheese. It is produced in La Manchain Central Spain, and a true Manchego is made with 100% sheep's milk because the area is very rocky and dry. Unstable for cows, but ideal for raising goats and sheep. The abundance of wild herbs that growin Central Spain’s grazing areas give the Manchego a unique and unmistakable taste and aroma. As it ages it goes from a soft and creamy nutty cheese with floral aromas to a firm and crumbly salty cheese with intense spicy flavors and finish.

Iberico 33-3: This Manchego style cheese is a blend of a 1/3 cow’s milk, a 1/3 goat’s milk, and a1/3 sheep’s milk, hence the name 33-3. Thischeese has a rich and buttery texture that is greatfor grating or even grilling. The aging time canvary from a few months to a few years.

Mahon Cheese: Named after the natural port in Mahon on the island of Minorca off the coast of Spain. Minorca is known for their cheese production and their respected dairy plants. The traditional way of eating this cheese is sprinkling it with black pepper, tarragon, and olive oil.
It's a very nutty and sweet aroma with a buttery and salty finish that goes well with a glass of Honoro Vera Garnacha. This full bodied wine has lots of dark berry flavors and spices.

It's tangy and sharp and is the perfect cheese fora dry bubbly Brut like Anna de Codorniu.
