Carrier - Choose a large cutting board made of bamboo or other hard wood. We carry a wide range available in our Kitchen and Dining department. Cheese Variety - Choose three or four cheese varieties for parties of four to 10 people, and choose four to five cheese varieties for parties of 10 or more. A good starter tray might include sharp cheddar, brie, aged Gouda, mild blue cheese, colorful cheese such as Red Leicester and anything else that catches your eye. If you're ever unsure, ask your H-E-B Cheese Specialist or Deli Manager for recommendations to create the perfect mix! Portions - Two ounces of cheese per person should be adequate. If cheese is the only thing on the board, you may want to opt for 3 ounces per guest to be on the safe side. Accompaniments - Add some dry salami, Marcona almonds and grapes or berries to garnish the cheese platter and offer a palette cleanser between cheeses. Preparation and Storage - You can prepare the cheese board ahead of time and store refrigerated for up to 24 hours in advance. Cube or slice a few pieces from each wedge of cheese and leave the rest of the wedge intact. Remove from the fridge about one hour before serving to allow the cheese time to cool to room temperature. Serving - Use a separate knife for each cheese being served to allow guests to cut from the wedge, if necessary. Have toothpicks and small plates close by.
