Ingredients

Recipe makes 6 Servings

1 Tsp olive oil
1/2 cup(s) white onion, chopped
1 carrot, sliced
1 Lb brussel sprouts, halved
2 cup(s) broccoli crowns, cut into bite-size pieces
1 Pt baby bella whole mushrooms, sliced
1 Tbsp cornstarch
1/2 cup(s) chicken broth
1 Tbsp less sodium soy sauce
1 Tbsp chipotle peppers in adobo sauce, minced

Instructions

Heat skillet to medium-high and add oil.

When oil is shimmering, add onions and cook until tender.

Add carrots and brussel sprouts, stirring frequently. Cook 2 minutes.

Add broccoli and mushrooms, and cook an additional 2 minutes stirring occasionally.

While veggies cook, whisk cornstarch and broth together until combined; blend in soy sauce and chipotle.

Add sauce mixture to veggies, and cook 1-2 minutes or until sauce thickens.

Remove from heat and serve.
