Veggie Quesadillas

Ingredients

Recipe makes 6 Servings

1 medium yellow squash, chopped
1 1/2 Oz fried onions
1 green bell peppers, seeds removed and chopped
1 tomato, chopped
12 flour tortillas
12 horseradish cheddar cheese, sliced

Instructions

Heat oven to 450°F.

Line two baking sheets with foil and spray with non-stick cooking spray.

Combine squash, onions, bell pepper and tomato in a small bowl; set aside.

Place 3 tortillas on each sheet pan.

Place one slice of H-E-B Cheddar with Horseradish Cheese on each tortilla.

Sprinkle each quesadilla with 1/3 cup of vegetable mixture and spread evenly.

Top each quesadilla with another slice of cheese and tortilla.

Spray the tops of the tortillas with non-stick cooking spray and bake in oven for 5 minutes.

Remove from oven, turn quesadillas over and bake another 5 minutes or until cheese is melted and tortillas are golden brown.

Remove from oven, let cool for 5 minutes and place on cutting surface.

Cut into wedges.
