4 medium baking potato
1 large egg
1/4 cup(s) 2% milk
1/2 Tsp iodized salt
1/2 Tsp black pepper
2 Tbsp chives, chopped
3/4 cup(s) 2% mild cheddar, shredded

Instructions

Scrub potatoes under running water with a vegetable brush.

Pierce potatoes a few times with a knife or fork.

Microwave potatoes on high 9-12 minutes, turning and rotating every 3 minutes until potatoes feel soft when squeezed.

Beat egg, milk, salt, pepper and chives until blended.

Remove top one-fourth of potato with a knife.

Scoop potato from center with a spoon leaving a thin wall at least 1/4-inch thick.

Mash or beat potato with milk mixture until smooth.

Fold in cheese until evenly distributed.

Fill potato shells with mashed potatoes.

Microwave stuffed potatoes on high 5 minutes.
