Turkey Jalapeño Sausage Fajitas

Ingredients

Recipe makes 4 Servings

1 turkey jalapeño sausage ring, sliced
1 Tbsp oil
1 green bell pepper, julienned
1 red bell pepper, julienned
1 small yellow onion, julienned
8 tortillas
1 lime, wedges
1/2 cup(s) shredded Mexican blend cheese
1 avocado, diced
1 cup(s) H-E-B Fresh Salsa, favorite salsa

Slice sausage into 3 inch links. Split them horizontally and then cut each half into 3 to 4 strips.

Heat a large sauté pan over medium high heat for 2 minutes. Add 1 tablespoon oil and swirl to coat pan. Add turkey jalapeño sausage and cook for 2 to 3 minutes until it begins to brown on edges.

Add in peppers and onion and cook for 4 to 5 minutes stirring frequently until onions are translucent and peppers are softened. Season with a pinch of salt and pepper if desired.

Wrap tortillas in a damp paper towel and microwave for 30 seconds to warm. Alternately, warm tortillas in a dry skillet over medium heat until slightly browned and heated through, 30 to 45 seconds per tortilla.

To serve place some of the sausage and vegetable mixture into each tortilla and squeeze a lime wedge over the top. Top with shredded cheese, diced avocado, and salsa if desired.
