Traditional Hickory Smoked Brisket

Recipe makes 12 Servings

1 package H-E-B Hickory Smoking Chips
9 Lb brisket, fat trimmed if necessary
1 Tbsp olive oil
3 Oz coarse ground black pepper
3 Oz kosher salt

Instructions

Preheat smoker to 250°F. Soak wood chips in water 30 minutes. Ensure that smoker remains around temperature entire time brisket is smoking.

Coat brisket with oil then liberally season with pepper and salt.

Smoke brisket 7 to 8 hours then wrap in butcher paper and place back in smoker 2 hours.

After 2 hours, wrap brisket in an old beach towel and place in a cold oven to rest 1 to 1 1/2 hours before slicing to serve.

Chef's Note: For a traditional bbq experience, serve brisket with pickles, onions, bread and a cup of your favorite bbq sauce.
