2 sweet potatoes, peeled and cut into wedges
2 Tbsp olive oil
2 Tbsp Adam Reserve Steak Au Poivre rub
1 Tbsp unsalted butter

Instructions

Heat oven to 400°F.

Place potato wedges in a large pot of boiling water; blanch potatoes for 5 minutes, then drain dry.

Put the potatoes in a large bowl, and toss with oil, rub and butter.

Transfer potatoes to a large baking sheet, and bake 40-50 minutes until potatoes are tender and slightly crispy on the outside.
