6 Lb H-E-B Beef Whole Market Trimmed Brisket
1/2 cup(s) Stubb’sBBQ Rub with Sea Salt Paprika and Garlic
1 cup(s) Stubb’s Original Bar-B-Q Sauce
2 cup(s) Stubb’s Moppin’ Sauce, optional

Rub entire brisket with Stubb's Bar-B-Q Rub. Let rest for a minimum of 30 minutes to allow rub to penetrate the meat.

While brisket is resting, prepare smoker for indirect low heat cooking (225°F to 250°F). If using charcoal, layer soaked wood chips with the charcoal. Place a foil pan under grates to catch drippings.

Place brisket, fat side up, over indirect heat and cook until internal temperature of thickest part reaches 180°F to 185°F, about 8 to 10 hours depending on your pit. To maintain low heat, check every hour to adjust vents, adding more charcoal and soaked wood chips as needed.

When brisket is done, remove from smoker and let rest at least 15 minutes or up to 45 minutes. Slice brisket against the grain and slather with Bar-B-Q sauce to serve.

Chef's Note: For extra juicy, tender meat, baste brisket with Stubb's Moppin' Sauce every 30 minutes during cooking.
