1 Tbsp Hill Country Fare Canola Oil
1 jalapeño pepper(s), sliced
1 cup(s) red onions, julienned
6 fresh garlic clove(s), sliced thin
1 Lb okra, cut 1/2-inch thick
1 Tbsp garam masala curry
1 Tsp ground coriander
2 Roma tomatoes, chopped

Instructions

Place oil in large non-stick skillet over medium-high heat.

Add jalapeños, onions and garlic and cook several minutes until onions and garlic are brown.

Add okra, garam masala, ground coriander, tomatoes and 1/4 cup water and cook until okra is tender.
