Spicy Shepherd's Pie with Shredded Potato Crust

1 Tbsp extra virgin olive oil
2 Lb hot Italian sausage
1 large yellow onion, diced
5 cloves of garlic, minced
10 Oz shredded carrots
2 cup(s) frozen peas
1 cup(s) H-E-B Organics Beef Stock
1 Tbsp tomato paste
2 cup(s) aged yellow cheddar cheese, shredded
20 Oz Simply Potatoes Hash Browns

Instructions

Preheat oven to 350°F.

In a large sauté pan set over medium heat, add olive oil followed by sausage, onions, garlic, carrots, and a generous pinch of salt and pepper. Stir fry for 8 to 12 minutes until veggies are slightly caramelized.

Add peas and stir fry another 2 to 3 minutes. Add stock and tomato paste. Bring to a simmer and cook until liquid is slightly thickened. Remove from heat.

Pour the meat and veggie mixture into an oven safe casserole dish. Top evenly with cheese and hash browns.

Bake for 30 to 45 minutes or until potatoes are nicely browned and crispy. Allow to cool slightly before serving.
